I think gumbo is one of a set of dishes that basically developed because you had a bunch of leftovers and none of them were big enough for a meal. I feel like every culture has one of those. You throw everything that’s not quite gone bad yet but is on the way out in the pot and cook it up and serve it.
Ours is called pyttipanna.
Basically you cube everything in 1/2-inch pieces and cook it in lots of butter. Potato, onions and whatever meats/sausage etc you have are the basics.
There are variants w cream, w more veggies, they sell salmon varieties and so on.
