Is this a good paraphrase of the Catechism?
All that we are and do are bound up in Christ in the Eucharist. We offer ourselves with Christ in the Eucharist. We participate in the death and Resurrection of Christ it. It renews the Paschal sacrifice.We become part of the heavenly liturgy. We Become one with Christ.:o

I have been taught that it makes the eternal sacrifice present to us.

As to why we do it, the command of our Lord to His Apostles “Do this (bless and break the bread) in remembrance of Me” (Luke 22:19) began it all.
