Beef in a Chianti spiked tomato sauce, cooked until it was so tender it fell apart in the crock pot. Served on top of Rotini pasta.
For dessert, a trifle layered with pound cake, raspberries and strawberries, vanilla pudding, more cake, blueberries, more pudding and topped off with cool whip. (I may have had more than one serving of that, but I will not confirm that. )
Twice baked potato with the second baking to include tuna, chopped onions and peppers, a bit of cream cheese, sour cream and cheddar cheese, a sprinkle of Old Bay seasoning. Easy and tasty. Washed down with a cold glass of tap water.
Tuna casserole and Propel water. After dropping Mama’s supper as well as the fur babies’ supper, I knew I had to get something in me that would stabilize my blood sugar.
Breaded boneless chicken, (not deep fried, but fried) on a bed of Italian salad greens with bell peppers, onions, croutons, Italian dressing and sprinkled with Parmigiana Reggiano cheese. And my dinner drink of choice, a glass of cold tap water.
