Home cooked chili (with 3 varieties of beans) and yellow rice. A small glass of Pinot Grigio. Because that’s all that was left in the bottle. 😏

There is nothing quite like homemade chili…I grew up on it…I knew I was growing up when I could eat my Dad’s chili instead of the kids’ batch…now, when my wife makes chili, she makes it as hot as she likes it, divides it into two batches, and then adds a few arbol chiles to my batch…we use kidney beans, pinto beans, and black beans, dry rather that canned…

For our dinner tonight we had leftover roast sirloin of pork with pork mushroom gravy. I also made some spaetzele noodles and yellow wax beans to have with the pork.

I had cut up the pork tonight to reheat it, to serve it in the noodles like a goulash.

I also served dinner rolls with our meal.

I am drinking some sugar-free pink lemonade soft drink.

Recipe, please.
Sorry…there’s no recipe for chili, just as there’s no recipe for beef stew…I’ll give you the ingredients, but the quantities are to your own taste…
Approximately 2 lbs coarse-ground chuck [we grind it ourselves]
2-3 medium onions
chopped garlic
plum tomatoes [we grow our own, and freeze, but canned will do…]
tomato juice [same as above]
1 12oz bottle porter or stout
beans [we use dry kidney, pinto, and black beans…sort, rinse, and soak overnight, quantity to taste,
but we use about 1 lb total, dry weight]
water

Seasonings [to taste]
salt
chili powder
ground cayenne
ground cumin [we go heavy with this]
fresh, coarse-ground black pepper
arbol chiles

Brown the meat with one coarsely-chopped onion, salt to taste.[6-qt pot]
Open and taste stout or porter…add what is left to pot.
Add tomato juice, [1-11/2 qts] and simmer.
Add first hit of seasonings.

In a separate pot, simmer the soaked beans with baking soda, 1/2 hour or so…rinse thoroughly.

Add rinsed and drained beans to pot…add some tomato juice.

Simmer …

Add second hit of seasonings.
Add coarsely chopped onion, garlic, and peeled plum tomatoes.
Simmer…
Add third hit of seasonings.

Add arbol chiles as needed as chili approaches desired consistency.
Chili should have enough heat to be a spiritual experience.

Serve in a bowl…plain…no cheese…no chopped onion…no sour cream…just good honest chili…a good ale on the side goes well…

As I re-read my post, it could possibly seem like I made the spaetzele from scratch, which I didn’t do. I made it, as in prepared it. 😉

It’s imported from Germany.

I still like to cook and bake, but it can take a lot out of me due to dealing with all of the health stuff that I have to deal with, so I’ll take short cuts to help me whenever I can. 🙂

I love to read about the delicious meals that you’re always having at your home. ❤️
 
Baked ham, German potato salad, summer squash en casserole, a fresh rye roll, and a very good stout…pfeffernusse [from Germany via Aldi’s] for dessert.
 
Potato pancakes,over-easy eggs, corned beef, and a very good stout.
 
Went to the doctor yesterday. I weigh 192 pounds. 😫 My wife is puzzled as I don’t look fat. Well, I have a tiny belly she said. Nothing outrageously distended. Or even distended. Maybe my head is too heavy?

So, it looks like it will be salads, coffee and water from here on out. Or an attempt at salads only! So, you might see nothing but that!
 
Goodness, losing weight isn’t all salads. Find some low calorie recipes you like and make or have your wife make those. Follow your dr’s orders and find a dietician if possible.

Coffee is a diuretic and full of caffeine If you’re pushing the water, you don’t need the coffee.

As for me, I had a couple of biscuits and water in the middle of the night. They got me to sleep.

I have begun exercising this past month. It’s pretty high-intensity exercise. I imagine I’ll lose weight eventually. The funny thing is that I don’t look obese. I think I have dense bones 🙂

Unfortunately, I think I’m going to have to cut out my granola bars. They are high in carbs. I’ll eat oatmeal for breakfast instead, a salad with tuna for lunch, and my regular dinner. I was just shocked I weigh so much!
 
Well, I’m a pescatarian and my wife is a vegetarian. She can only eat once a day due to nausea from medicine she takes. So, it’s usually veggies and carbs. Black beans and yellow rice, for instance. Or enchilada casserole, which I make with tofu crumbles. I skip pasta night and usually have a peanut butter sandwich on sandwich thins (low carbs). No dessert for me.

My wife has her doctorate in nursing and is perplexed as to how I weigh so much yet only have a little mid-section fat. I’d love to say it’s muscle mass, but I’m not He-man. I’m only 5’7". It’s the strangest thing!
