Our parish has a new newsletter in addition to our weekly bulletin. The first edition has a recipe for one of late parishioners squash casserole.

God bless our Mary Catherine and the culinary memories she left us with. That squash casserole graced all of our parish suppers and get togethers. Her sons wives continue to make it for our events. But of course, Mary Catherine made it the best. ❤️
 
It’s been 17 years since I moved out of the US so I’m not always up to speed on these gastronomic developments
This is probably a good thing given the huge number of junk foods out there.
I had a small bowl of Wheat Chex cereal with almond milk, and black coffee.

When I lived in Europe, I wasn’t up om any of them, either.

I had strawberry yogurt.

For our dinner tonight I heated up a beef smoked sausage. I made rice pilaf and yellow sweet corn to go with it, and we had sugar-free raspberry Jello for dessert.

I’ve been drinking some cranberry water beverage.
 
Fried chicken, mac-&-cheese, and grilled veggies, washed down with a good IPA…Moosetracks frozen yogurt for dessert.
 
Water. Not sure if I’ll be having cream of chicken soup or yogurt. My surgeon is trying to reintroduce me to different textures of food. I have become comfortable with just my juices, protein shakes and water.

I usually try to do 16:8 intermittent fasting so that means no breakfast. I usually do fine but it’s the time of the month and I had breakfast of a caramel latte and a breakfast biscuit. The whole lot is 300 calories max so I hope the damage isn’t too bad. Depends on how I behave for the rest of the day.

If I fast for religious reasons I do find the willpower but if I fast to lose weight, my willpower forsakes me. 😞😏😒

Mary Catherine Hannon’s Squash Casserole

15 lbs summer squash
1 medium onion
1 cup grated cheddar cheese
1 tbsp sugar
1/4 cup evaporated milk
1 egg beaten
1 tbsp butter (not margarine)
1/3 cup Ritz crackers, crushed
Salt and pepper, to taste

Boil squash and onion, mash with potato masher. Add beaten egg, milk, sugar, salt, pepper, butter, crushed crackers and cheese. Place in a buttered casserole dish and bake at 350F degrees, until hot and bubbly, about 25-30 minutes. Sprinkle more cheese on top, if desired. This dish freezes well.

Can be doubled, tripled, depending on how many people are being fed.

A real winner at parish suppers, socials and other get togethers.
 
Breakfast is the most important meal of the day. You are breaking the fast since the last meal you ate and need the calories. You want your heavy meal at breakfast and your lunch and supper to be lighter.

Since my surgery and now being in the phase where I’m being reintroduced to food, I try to make my solid meal breakfast and spend the rest of the day on my liquids. But all I really want are my liquids.

I go in for x-rays next week (which will determine where we go from here surgery-wise). I’m going back on my liquids tomorrow and will resume trying to eat food after my appt.
 
With all due respect, I disagree that breakfast is the most important meal of the day. Besides I have my ample fat stores from which my body can draw its calories.

For someone whose family background includes a susceptibility to metabolic syndrome, it’s not good to have a constantly elevated insulin level which prohibits the body’s access to its own fat stores.
 
You’re following dr’s orders in regard to your diet? My PCP says a diet like Pritiken is nutritionally sound for those with or prone to metabolic syndrome. (That’s one thing I was tested for.)
 
Yes.

My doctor cleared me for intermittent fasting with one condition. She told me to take vitamin D supplements and to not fast for more than two days straight.
