I never pay any attention to it anyway, but I might as well do a special dessert for it sometime just for the hay of it. Methinks I’ll make white chocolate raspberry cheesecake over this weekend 😍 :

I just remembered something. Feb. 14th was Ash Weds. and St. Valentine’s Day. For my family it is also my Grandfather’s Birthday, and if he were still alive it would be his 125th 2/14/1893.

I’m up drinking coffee right now trying to wake up.

Last night’s dinner was good, though. I had falafel and rice, asparagus, and a salad with spinach, spicy cold cous cous, cold roasted red bell peppers, avocado, and olives.

That’s why I usually stick to salads - no cooking required.

I can make a big batch of soup that only needs heating, or just blend the whole thing into a smoothie.
 
Bean and cheese burrito. I have to eat food early if I want it to digest. Drinking Gatorade (Green Apple).

Here in New Mexico there is a regionally famous nut: the piñon nut. It’s hard on the outside and has a mild buttery taste on the inside.

I use that flavor for my coffee. I bought a bag of whole-bean on ebay for ~20 bucks with an electric coffee grinder. I’d recommend trying it.

Mama had tomato soup, grilled cheese sandwich and water for lunch. I had a small (asiago) cheese quesadilla and the rest of my bottle of Gatorade.
 
Gatorade. Getting ready for bed so keeping it extra light. Mama is having Boost and V8. Says she’ll have a Hershey bar at 10pm when she wakes up.
 
TK, those bean cakes look really delicious ! I love going to the Phillipino supermarket nearby and buying
types of biscuits (cookies) with a bean filling .
 
Dark green salad with feta cheese, black olives, green onions, parsley, apple cider vinegar and vinaigrette dressing.

Plain almonds. Hot earl grey :coffee:

At my previous residence I lived two doors down from one of my coworkers who was FIlipino. Her friend jokingly called me ‘her son’ because she had many times invited me over for her food. Some of the stuff she made was pretty potent. I particularly remember the full slices of ginger she would sometimes use in her dishes. If you’ve ever cooked with ginger root, you know it’s pretty strong stuff except when diced small. Good for the gut too.

Last I talked to her she was mulling over opening a restaurant.

edit: those Japanese bean cakes have a chewy-like texture that I love.
