Tofu Tacos: Fried onion, poblano pepper, red bell pepper, tomato juice, soy sauce, panko bread crumbs, crushed walnuts, and tofu, boiled down & baked. Stacked mine on soft white corn tortilla and topped with shredded cheddar cheese.

Washed down with two tall glasses of green tea.
That sounds yummy. But I would substitute soy cheese since I’m lactose-intolerant.
 
Stopped at Subway on the way home…chicken-bacon-ranch on herbs & cheese bread [loaded with onions, mushrooms, banana peppers, spinach, lettuce, tomato, and chipotle sauce], a good kosher dill pickle, and cranberry ginger ale.
I probably won’t eat until lunch tomorrow.
 
I bought a new toy for the kitchen and Instant Pot. I will use it tomorrow for a beef stew.
Tonight was leftover night, and I had a pork chop with a bit of cornbread stuffing and yellow wax beans.

I guess I am soy intolerant. Every time I have anything with soy, I get terribly ill. I stick to almond milk or cashew milk.

While I limit dairy, I have to say that whoever thought of making cheese and beer into a soup deserves a medal! ❤️

Just as long as none of it goes missing. 😠 🥢 I don’t cook for free except for family or people who are really nice to me.

Turned out pretty good. Tofu is very much like Greek yogurt in that it is a base that be made to taste like whatever you use with it.

Almond and cashew milk are good, but my personal favorite is flaxseed milk 🙂

Very refreshing. According to the carton is also gives you glowing skin… which sounds very handy in case the electricity goes out and you don’t have your cell phone or a flash light near you.

Since I’ve gone off news for Lent, Mama alerts me to things like this. She knows I buy various cooking appliances and wanted to make sure the Instant Pot wasn’t among them.

I limit dairy too because I’m lactose-intolerant.
 
I did not either, but I use Almond Milk quite a bit.
That’s what I’ve been using, mostly, Milt. I love it. Almonds have great health benefits as well.

I am having oatmeal with blueberries and strawberries, whole wheat toast, a small cranberry juice, and jasmine tea.
