Moroccan Vegetarian Sweet Potato Stew

Diced sweet potato, acorn squash, tomato, onion, garlic, raisins, and carrots, boiled in vegetable broth with a lot of spices.
I’m having it with buttered Indian Tandoori Roti flatbread. Next time I make it, I’m going to take out the acorn squash and added yams & extra raisins.

I try to drink as much water as I can, but I will also have a soda with my breakfast sometimes.

I like Acorn squash. I’m not big on squash in general, so I can understand if you don’t care for it. It’s probably the only kind that I like.

The squash isn’t bad but it didn’t seem to fit as well as everything else. Plus acorn squashes are pretty big: you could have just as easily called it “Moroccan Acorn Squash Stew” as you could sweet potato stew.
