I do not understand why a marriage of two protestants is sacramental and valid
Because Protestants don’t have any requirements of “form” for a valid marriage.
, whereas my marriage to a non-Catholic Protestant needs permission
If the marriage is going to be celebrated by a Catholic clergyman in a Catholic church building, then it only needs permission for liceity; it would be valid even without the permission.

It’s not invalid because you didn’t ask permission to marry a non-Catholic Christian. It’s invalid because you didn’t ask for dispensation to marry outside a Catholic church building and by a non-Catholic officiant. Had you requested and received that dispensation, you’d be in a valid Catholic marriage now. As @1ke points out, you can still have a valid Catholic marriage; either convalidation or sanation is a possibility for you. As others have mentioned, you can start this process by calling a local Catholic priest.

Formal defection is no longer a possibility in Canon Law.

Please, if you’re not qualified to comment on something, don’t do so. You will lead people in the wrong direction. I strongly suspect this is some kind of validation thing for you. Please seek help.

I know it used to be possible as something that could be done by putting a note next to baptismal records, although I gather Pope Benedict XVI abolished it in 2008/2009.

I was silly to think that this was a different process (i.e. I thought the process I talked about was different to formally leaving the Church).
