Personally, I am really suspicious of this whole low carb diet business. The French and Italians eat tons of bread/pasta/carbs - have done for centuries and centuries (so has the rest of Europe). Norway I believe eats more bread that any other country in Europe (someone can fact check that; I did hear it somewhere.) These countries DO NOT have big weight problems amongst their populations. Not now, not ever. It’s nonsense. My advice to the Pope is to eat balanced, don’t overdo the pasta, but don’t cut it out.
I agree with Cardinal Dolan, who said Pope Francis should look for another doctor. Maybe the Pope can switch to whole wheat pasta and add more vegetables to his diet. But a drastic reduction in pasta: never!
Good point on the whole wheat pasta. They have made such incredible improvements in the taste and texture of whole wheat pasta in the last five years or so! It is really good now. And it has a lot of minerals, protein and a good shot of iron. There is a little difference between brands. I eat about 60-40 white/whole wheat. I find that whole wheat goes just fine with tomato sauces. But for some reason, not so well with cheese based pasta dishes (or olive oil, garlic/lemon etc). For those I do white.
