From what I understand, folding your hands in a specific way - palms together and fingers pointed upward - comes from the earliest days of the Church, and has a Jewish origin. It is a sign of supplication to God in prayer and is also used, even today, in strict Jewish Orthodoxy from what I’ve been told.
I too was pre-Vatican schooled and before receiving Holy Communion was taught to fold my hands in this way. Now, I just enfold my hands together.
