Yes, I would have. It would have taken several hours to thaw, and…IT"S BACON!!! Bacon is preserved just by fact of being bacon–it’s already been salted and smoked! Then it would have been cooked anyway. So that’s 3 forms of preservation to get rid of any bad buggies. 🤷 I don’t see the problem.

And yes, the kids would have eaten it too. I’m of the mindset that kids can’t live in a sterile bubble. If they do, they won’t develop any immunities to anything, and they will be more sickly all their lives than if they were allowed to be exposed to normal stuff and develop normal immunity.
 
Yes, it’s cured meat. It’s fine.

edited to say… oh, it’s not even opened?! Definitely edible.

Then you should not give her fried bacon. 😃

Nitrates that are used in the preservation of meats can be a source of respiratory diseases in young children. However, I do not have a reference to the paper that said so.

Having said that I would have used it without problems.
 
That is the essence of why cured meat was invented in the first place. Prairie Ham was cured in batches once a year and as they were eaten the mold was cut off prior to soaking out the salt and then frying to eat.

I’d have eaten it, and served it to my family.

Now, poultry (roast turkey, chicken etc.), different deal and it’d been dogfood.
 
**Since we get this direct from the butcher and it tastes and cooks so differently from store bacon I just wasn’t sure. I am assuming it doesn’t have most of the garbage that other bacon does. It probably would have been safe, but at least I’m not sorry:p
