I always like to hear these two:

Ego te absolvo

and

Benedictio Dei omnipotentis, Patris et Filii et Spiritus sancti descendat super vos et maneat semper. Amen.

So… “ille desiderat fiorda.”

Note: I don’t know what case dēsīderāre takes other than the accusative, so I just went with that.
 
When I was a kid, I liked saying “ad deum qui laetificat juventutem meam.” (To God Who gives joy to my youth), which was a response to the priest’s “Introibo ad altare Dei.” (I will go up to the altar of God.)
