I am working on something and I need some assurance.

would it permissible to call Jesus, a sacrifice?

(I apologize if this is a weird question, I am known to be scrupulous, so I just want to be sure)

What I am going to write is that without sacrifice, there is no love. And Jesus, who is God, and love himself, was the ultimate sacrifice.

Of course! He is the Paschal Sacrifice for all mankind. Look even at the prophetic words of Abraham:

Genesis 22:7-8
Douay-Rheims 1899 American Edition (DRA)
7 Isaac said to his father: My father. And he answered: What wilt thou, son? Behold, saith he, fire and wood: where is the victim for the holocaust?
8 And Abraham said: God will provide himself a victim for an holocaust, my son. So they went on together.

Look at our Lord’s very words when the Passover meal was concluded:

Luke 22:19
Douay-Rheims 1899 American Edition (DRA)
19 And taking bread, he gave thanks, and brake; and gave to them, saying: This is my body, which is given for you. Do this for a commemoration of me.

As well, Paul (and the author of Hebrews, if not Paul) thought the same. The Church has taught this from day one.

Ephesians 5:2
Douay-Rheims 1899 American Edition (DRA)
2 And walk in love, as Christ also hath loved us, and hath delivered himself for us, an oblation and a sacrifice to God for an odour of sweetness.

Hebrews 10:12
Douay-Rheims 1899 American Edition (DRA)
12 But this man offering one sacrifice for sins, for ever sitteth on the right hand of God

St. John the Baptist referred to Jesus as the Lamb of God, which is the unblemished lamb sacrificed and then eaten in the Passover Meal.

Obedience is better than sacrifice. Jesus is at least a sacrifice, God’s sacrifice for us, something we thank Him for at communion. The Lamb slain before the foundations of the world.

Obedience is better than sacrifice.
True - the protetant is correct. You cannot have true self-sacrifice without obedience.
Father, if thou be willing, remove this cup from me: nevertheless not my will, but thine, be done. [Luke 22:42]
Our Lord Jesus would have been obedient even if the Father had allowed this cup to pass from him.
