I am not familiar with Eastern Jesuits. Do they have their own Eastern province or assistancy?

They run educational institutions in many countries of the world.
Eastern Europe - Cluj, Warsaw,Cracow, Zagreb.
In Ukraine Lviv UCU wasn’t originated by Jesuits , but if I am not mistaken, Dr. Borys Gudziak is Jesuit.

No, The Rector of UCU, Rev.Borys Gudziak is probably not a Jesuit. As far as I know he is a large-scale leader with a great ability to influence and impress the strong and powerful Ukrainian personalities, but he seems not to be a Jesuit.
Wikipedia does not say anything about it, but the Ukrainian Catholic University is the first Catholic university to open on the territory of the former Soviet Union and also the first university opened by one of the Eastern Catholic Churches.
In the West, there are friends of the UCU, bright historical figures who boldly raised their voices in defense of the dignity of Ukrainian identity.

The historical information about the Jesuits and their contribution or ethnicity in Eastern Europe can probably be compared on Wikipedia

Yeah I’m not sure how that works. I always got the impression that it was more of a case of one off unique vocations in which a priest is both a Jesuit and an Eastern Catholic, but perhaps they do have a province.
There’s a Byzantine Jesuit in my city… he pastors a Ukrainians Greek Catholic parish.

Presumably he would be in relationship to the Eastern Catholic bishop for that Eastern Diocese rather than to the Local Latin bishop

Unless he’s bi-ritual which also happens.
Not a Jesuit… but I know the late local Melkite priest also worked for the Latin archdiocese as a prison chaplain.
