I have looked at several sources online for todays readings and felt it was missing a key piece of the scripture. Online sources from EWTN and USCCB leave out the final two words “and fasting”. I went to both my Catholic bibles and it has “This kind can only come out through prayer and fasting.”

Especially here at Lent and prior to Ash Wednesday when fasting is required, why would they leave off those final two words?

I am really feeling the USCCB is trying to water down Catholicism in the US 😟
 
The words “and fasting” are not in some of the oldest Bible manuscripts and so Bible scholars tend to think they were later additions to the original text. For instance, it is my understanding, the words are not in the Codex Sinaiticus nor the Codex Vaticanus. More info on this can be found here.
 
For this reason, I have a reference collection of bibles. Comparison is frequently illuminating. Alternate translations are über cheap on eBay, Amazon, ThriftBooks or in thrift stores.

As well, for all we know, Mark may have penned “and fasting” in his long ago lost “original” manuscript - but it was inadvertently omitted over the centuries in one of the hundreds of copies hand made after that. Since Mark is essentially the Gospel of Peter, I sincerely doubt that Peter omitted fasting as a spiritual good.

The Archangel Raphael’s words in Tobit 12 stand as evidence of that.

Because the earliest Greek manuscripts do not have the words “and fasting.” These words were likely later additions that made their way into the manuscript tradition. The USCCB is not trying to water down the faith here, rather they are trying to be faithful to what the scripture actually says.

Each would has its own medicine, which must be applied to it; that which is used for the heel will not cure the eye; by fasting, the passions of the body, by prayer, the plagues of the soul, are healed.
Any books or resources that deal with this topic in depth? I really like the idea of a spiritual cure book.
