While I could make a few comments on the matter of liturgical language vs vernacular in the East, I will confine myself to the reference to Hebrew.The mass was originally in the vernacular. That’s why we had Latin in the first place and not in Greek or Aramaic or, most likely, Hebrew. The vernacular was used in the Eastern Churches regularly and they did not lapse into Protestantism.
The language spoken in Palestine in the 1st century was a dialect of Aramaic (albeit a dialect influenced by Hebrew). By that time, Hebrew itself had become mainly a liturgical language, and was used in main by Jewish priests and scribes.
