Our new fave is black bean/pineapple enchiladas. When I get in the mood to try something new, I hunt something down on the internet. This recipe I found in the list of Pillsbury Bake-Off finalist recipes. I was hunting for a no-meat main dish for Friday night during this lent. These are so yummy! My DH wants them again this Friday.
Basically, you make the filling with black beans, crushed pineapple, onions, green chiles, bell peppers, cheese, and regular enchilada sauce. You fill flour tortillas with this mixture. Then you mix a little bit of the pineapple juice w/ the remaining enchilada sauce, and pour over the top of the enchiladas and bake. Here’s a link to the recipe:
