Our new fave is black bean/pineapple enchiladas. When I get in the mood to try something new, I hunt something down on the internet. This recipe I found in the list of Pillsbury Bake-Off finalist recipes. I was hunting for a no-meat main dish for Friday night during this lent. These are so yummy! My DH wants them again this Friday.

Basically, you make the filling with black beans, crushed pineapple, onions, green chiles, bell peppers, cheese, and regular enchilada sauce. You fill flour tortillas with this mixture. Then you mix a little bit of the pineapple juice w/ the remaining enchilada sauce, and pour over the top of the enchiladas and bake. Here’s a link to the recipe:

I swear, my house is the most badly designed apartment I’ve ever lived in. I’ve got the itty-bittiest little kitchen you’ve ever seen. If I step back from my teeny-tiny scrap of counter, my back touches the wall. There’s an enormous fridge taking up half the space, which I can’t get rid of because it belongs to my employer, and the kitchen can’t be expanded because it would block the entrances to every other room. The counter, such as it is, has cupboards about 18 inches above it, and they are the same depth as the counter so that you can’t reach the back of the counter without hitting your head. And the walls are all concrete so you can’t put a new shelf up or expand your space. Can you tell I don’t like my kitchen? I’m moving in six months or so, and I can’t wait. I don’t know what job I’ll have, and I’m sure to live in a much smaller place, probably one room, but it’s got to be better than this. [/RANT]

Fried Cabbage with bacon
Cheddar potato “smash”

I like to try to make a good variety of foods during the week and pack leftovers for work. That’s why I always make enough for leftovers…it’s waaaay to expensive to buy out food at work!
 
You don’t understand the smallness of my kitchen. There’s no oven, either. Just the toaster oven, which is about three inches tall inside. There ain’t no room for an oven-proof baking dish in there. 😦

Back to the thread topic, I believe I might make some kind of avocado and chicken wrap for dinner. Not sure what I’ll put in it, but I may as well use the chicken I bought.
Owwwwwwww. :hug1: I feel for you - I’ve had small kitchens for about 16 years. Finally have a decent one where I’m at.

This is going to sound awful, but I think I’m going to have breakfast tonight. (It’s just me and I don’t feel like cooking) Cereal anyone?

I’m having breakfast for dinner tonight. I’m having omelette wraps:

Fry up one sausage, three mushrooms, a hot chili pepper, half a bell pepper, a clove of garlic, and a third of a small zucchini in a bit of olive oil. Add two eggs and a bit of grated cheddar and scramble. Toast two flour tortillas over an open flame, then divide the omelette into two and roll it up in the tortillas. Serve with salsa. Yum!
 
I’ll be making spaghetti tonight, and I know! Ho hum! For fairness, I’ll give you a quick rundown of our menu for the past several days.

Wednesday: 30 minute chicken (a Pampered Chef recipe), homemade mashed potatoes, peas

Tuesday: Italian pinto beans over rice, covered with mozzerella

Monday: Burger King as it was Cub Scout night

Sunday: Steak, baked potatoes, corn

Saturday: Pot pies

Friday: Fishsticks, macaroni and cheese, green beans

Tomorrow will be Creamy One Pot Pasta (another Pampered Chef recipe). I make it by boiling penne pasta in chicken broth, adding veggies, and half a package of cream cheese. The cheese melts and blends with the broth to make a yummy sauce. It’s such an easy recipe that can be made meatless during Lent, or I can add pre-cooked chicken to make it a heartier meal.

I’m having tofu burgers with pickled ginger slices, rice, root vegetables - lotus root, burdock, konyakyu (don’t know the English), carrot, bamboo shoots with a little red chilli - and cream of spinach soup.

Last night, I went back to my roots and cooked a Tuscan dinner for my family. The prep time and actual cooking only took an hour and I baked bread and cake the day before.

For dinner, we had schiacciata (flatbread with rosemary), spinach and ricotta dumplings (very filling and really delicious), braised potatoes, and apple/pine nut cake. I baked the day before, the dumplings only took me twenty minutes tops (including prep time), and the potatoes, thirty minutes (including prep time). I never get to cook so I had a blast.

My only issue is that now everyone in my hometown wants bread. And, back at school, everyone I know wants me to cook for them. I don’t mind, it’s just a lot of people, hahaha
 
Tonight will be baked Tilapia with some potato something and some green beans or peas.
 
Easy homemade pizza:

1 Boboli crust

Spread minced or pressed garlic over crust to taste.

Top with fresh spinach tossed with a small drizzle of olive oil (not too much or the crust will be soggy).

Top spinach with crumbled feta cheese.

Top feta cheese with slices of fresh plum tomatoes.

Top entire pizza with shredded mozzarella cheese.

Sprinkle with grated Romano or Parmesan (we prefer Romano).

Bake according to pizza crust package directions.

You may, if you wish, add salt, but usually there is enough salt in the cheeses.

Good for Fridays! I usually make 2 pizzas.
 
It’s Friday…no meat, no dairy. Tofu and broccoli stirfry with pasta instead of rice. The kids love rice but it gets everywhere!

Later in the evening we have our Friday sci-fi night, with soy cheese pizzas and root beer. We’ve been doing that forever. 👍
 
Good healthy food for us senior citizens: fried shrimp, french fries and cole slaw.

OH MY GOSH!!! Can I have those recipies?? You have my mouth watering just reading this!! It sounds fantastic, especially the dumplings!

Too depleted again to make dinner (this FLU WILL NEVER GO WAY!!!)

But I recreated a recipe for breakfast that I saw on Diners, Drive-ins and Dives.

It’s called a Mess----there was another name attached but I forgot.

You take bacon, chopped onion, chopped pepper, chopped potato, and fry them up on a flat-top. When they’re good and crusty you drop in two whole eggs, and then ‘mess’ the thing up a bit.

Then you spread shredded cheese over the top, cover, and let the cheese melt.

I just had dinner - a very late dinner. (It’s 12:40am on Sunday here. I ate at 11:30.) I had a roasted red pepper and brie sandwich. This is the same meal that caused the fiasco last weekend when I melted my rice cooker that was sitting on top of the toaster oven. 😊

Take a whole red pepper, and broil it in the oven, rotating occasionally, until all sides are lightly blackened and the skin is popping and peeling. (Remove all flammable objects from on top of the oven before you start. :rolleyes:) Let the pepper cool until you can stand to touch it, then peel the burnt skin off it and remove the seeds and stem.

Place the soggy cooked red pepper on a nice fresh bagel or two pieces of multi-grain bread. Slice some brie cheese and put the slices on top of the pepper. Arrange them carefully so they don’t come sliding off the slippery pepper pieces. Put the open-faced sandwich back into the oven until the cheese is melted. Eat carefully - it’s messy.

I sometimes add sliced mushrooms or baby spinach to the sandwich, between the peppers and the bread. I never use any kind of spread or sauce, but you could if you like.

Once saw a segment on a restaurant that served nothing but pannini----only they grill-pressed the bread inside out, and then added the fillings.

Been meaning to try it ever since!

Blarney cakes!😃 In lieu of St Patty’s day around the corner…I picked up this recipe today at Publix…

Ingredients:

1 cup white cheddar cheese, grated
a package of already prepared mashed potatoes
1 cup Japanese bread crumbs
1 cup kale (chopped)
1 egg (or 2 egg whites)
Olive oil spray

Mix the kale, 1/2 of the cup of bread crumbs, kale, 1 cup cheese, and 1 egg into a large bowl. Shape them into small patties, (like a salmon cake) Then dip them lightly in the rest of your Japanese breadcrumbs…and lightly fry in a pan coated with olive oil spray.

I tried these today at the store…and omg…yum–and not bad on the health-odometer.👍 I’m either going to make them tonight, as a side to go with baked catfish–or we will save them for Monday, to be a side with corned beef.
