In the Tridentine Mass, it seems to be referring to transubstantiation, since it follows “this is the Chalice of my Blood, the Blood of the new and eternal Covenant”, describing that the cup of wine is about to become the Chalice of Blood mysteriously. But in the Novus Ordo Mass, it refers to the Passover of Jesus, since it is followed by “we proclaim Your death, O Lord, and profess Your resurrection, until You come again”. (This one is more certain, since before the update in translation, it is the reply of “let us proclaim the mystery of faith”.)
