What's for dinner?

Maybe if we shared what we’re cooking for dinner, we could get ideas. I am always looking for a new and exciting meal to serve my family. We usually have the same old same old but tonight is kind of special. Here’s our menu.

I am making boneless skinless chicken breast with garlic and lemon seasoning. I am also serving a pasta salad I made last night that is loaded with homegrown tomatoes, cucumbers, and peppers. I also tossed in hard-boiled eggs, cubed ham, onions, and cheese. I am going to boil some homegrown zucchini and top with a hint of butter and salt. Chocolate layer cake (scratch) with store bought cream cheese icing is for dessert. Not bad for a Monday night (Thanks you, Jesus.) but my folks are coming to dinner so it is extra special.

I am making Maceronia me Kima with a greek salad (heavy on the Feta).

I am making a deer roast with carots potatoes and onions, and a carrot cake with cream cheese icing becuase it is my namday- Come for dessert!!!

Another idea for the zukes, since you probably have a lot of them: last week I sauteed some diced red bell pepper in a little olive oil. When it started to become soft, I added a thinly sliced zucchini, a little garlic powder and black pepper, and a couple tablespoons of water. Put a lid on the pan and let it steam until the zucchini was soft. Turned out pretty good for an experiment.

Right now my husband has gone grill-happy, so most of our meals involve grilled something (usually chicken or fish, since I don’t eat red meat). We’ve discovered that asparagus spears that have been tossed in a little olive oil, salt and pepper, spread on a sheet of foil, and set on the grill until tender are fantastic. Also, for grilled potatoes: slice thinly and place on sheets of foil (usually about 1/2-2/3 of a big baker potato per packet). Add some thinly sliced onions, a little oil or butter, salt, pepper, and whatever seasonings you like. Our favorites are garlic powder or Emeril’s essence (spicy and also good on chicken). Seal the foil to make packets, and grill for about 15 min. on medium heat or until potatoes are tender.

Tonight? Who knows (it’s Monday). I might take advantage of the cooler weather and actually use my stove.

Well, we are going to have Chicken! I don’t like chicken much though except for my one recipe I have for “Creamy Baked Chicken.” It’s cooled off here too so I can use the oven.

"Creamy Baked Chicken is easy but delicious and my favorite meal, strangely enough, as I said before, just about any chicken dish leaves me cold but this particular recipe makes chicken taste like heaven.

Oven 350 degrees. Dip chicken in water and roll chicken in flour, salt, pepper and paprika. place in pan, cover with 1/4 C. pats of real butter and cook 30 minutes. Remove from oven and turn the skinless chicken breasts over. Mix 1 1/2 cup of hot water with powdered milk and pour over the chicken. Bake 1 1/4 hour more until tender.

I also am making a Chocolate Peanut Butter pie for dessert! Heavenly! UM! UM! Good! :angel1:

Whoops! Forgot that one didn’t I? 🙂

It’s real easy. Use a Graham cracker pie crust. Mix one large package of instant chocolate pudding (using pie measurements on the milk part.) After it begins to thicken, mix into the pudding 1/4 C of Peanut butter or more according to your taste. Pour into the pie crust and when firm, top with Real Whipped cream. Just before serving add skinless cocktail peanuts to garnish the top. (If you put them on too far ahead the peanuts get soft and I like them crunchy) If you like them soft you can add them when you make it.

Redskin potato cheddar soup
Toss salad
Sauted green beans with garlic, ginger, red pepper flakes and soy sauce.
Smoked/bbq. chicken
Apple crisp

I’m canning my salsa today, so I’m saving a little bit and will probably end up baking chicken breasts in it. Will probably also grill a little corn.
 
Today is my husband’s birthday 🙂 and my Feast Day 😉 , and he gets to pick his favorite meal…or at least a favorite meal. He voted for, ahem, a real delicacy…
fish sticks
smashed potatoes
green salad
and I will likely do something with some zucchini, maybe a saute’ with olive oil and white pepper.

How about Cookies? 😃

NEIMAN-MARCUS COOKIES (Recipe may be halved)

2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)

Measure oatmeal, and blend in a blender to a fine
powder.

Cream the butter and both sugars. Add eggs and
vanilla, mix together with flour, oatmeal, salt,
baking powder, and soda.

Add chocolate chips, Hershey Bar, and nuts. Roll into
balls, and place two inches apart on a cookie sheet.

Bake for 10 minutes at 375 degrees.

Makes 112 cookies.
 
chicken salad wraps:

boiled herbed chicken (Garlic, italian seasoning)
mozzerella
mayo
parmesan
onion powder
mustard
in bread or a tortilla
 
Steaks (marinated in italian dressing and lemon juice)
Mashed potatoes
Brocili with salsa/cheese sauce

Prolly ice cream for desert.

(Tomorrow I will HAVE to remeber to turn the corck pot on before work…or it will be sandwhiches for dinner 😉 )

How long does this last? Could I make it on Sunday and still serve on Monday? Tuesday?
I always have to prep ahead of time.
