What's for dinner?

Maybe if we shared what we’re cooking for dinner, we could get ideas. I am always looking for a new and exciting meal to serve my family. We usually have the same old same old but tonight is kind of special. Here’s our menu.

I am making boneless skinless chicken breast with garlic and lemon seasoning. I am also serving a pasta salad I made last night that is loaded with homegrown tomatoes, cucumbers, and peppers. I also tossed in hard-boiled eggs, cubed ham, onions, and cheese. I am going to boil some homegrown zucchini and top with a hint of butter and salt. Chocolate layer cake (scratch) with store bought cream cheese icing is for dessert. Not bad for a Monday night (Thanks you, Jesus.) but my folks are coming to dinner so it is extra special.

HYSTERICAL! I am a teacher who is back at work now. I do not even recognize myself as the author of the above. Summer was such a different time for our family. Tonight it’s leftover Chinese food! I am laughin’ out loud! Maybe I should get off this computer and prepare a respectable meal…like in the good old days! Thanks for the laugh!
 
DOES anybody have a good veggie meal they’d like to share?

I really like to cut down on meat in our family whenever possible.

Has anybody tried “Grillers”? You can put it in Hamburger Helper, Chili, anything that calls for ground beef. I think it’s so super!

Also I’d like to tell about “Tofu Seasoning”–tacos --you can buy it from the health food store. With all the other goodies that make up tacos–your family willl love it. It’s a seasoning that goes in Tofu —makes delicious tacos!!!

I would buy a package of splenda (sugar substitute made FROM sugar) and use it to make the apple pie and sugar free cheesecake on the back. I THINK you can even go to, like, splenda.com or something like that and find recipies. OR, just do a google search for “sugar free desserts” there are SO many options out there.
I’m allergic to splenda…I try not to eat sugar…recipies with natural sugar (aka: just fruit in it…) that works for me…😃 I make lunch/ dinner a lot. Um…I’m pretty busy, so I make easy things like:
Tortillas
a type of meat
shredded cheese
Then you warm it up in the microwave (50-55 seconds). Then you can add salsa or sour cream or lettuce-whatever toppings you like, then roll the tortilla up, and add fruit and veggies on the side, and your ready to eat…
 
I have no clue. I am making Scolloped Potatoes. The rest is a mystery. We are going to a covered dish. LOL! Hope the Taters are in line with whatever else shows up.
 
bbq ribs…either cheesy tomatoe grits or rice…
green beans… :hmmm: wonder if I should make bisquits…
 
This is so delicious! Thick cut pork chops or pork loin, slow baked with apples, butter, brown sugar, and cinnamon. A friend brought this dinner to us and it was so wonderful!

First peel and slice 4 Granny Smith apples. Place them on the bottom of a 9x13 pan. Top with several pats of butter. (We use Fleischmann’s unsalted margarine because my daughter is allergic to dairy.) Sprinkle brown sugar (quite a bit) and cinnamon. 4-6 thick cut pork chops or pork loin. Season your chops with salt and pepper (or Emeril’s seasoning) and brown in skillet. Do not cook through! Place the browned pork chops on top of the apples. Cover with foil. Bake for 2 hours at 325. If you are using thinner pork chops you will probably only bake for 1 hr. The meat should be extremely tender. Yummm!

Serve stuffing and carrots on the side.
