In Mass, you will hear at the most 4 hymns. There is no reason you have to love them all (if I never hear “On Eagle’s Wings”, “Here I Am, Lord” or “Be Not Afraid” again in my life, I will be happy!) There are other hymns from Mass like “O Sacred Head” or “How Great Thou Art” or “Joyful Joyful We Adore Thee” or “Soul of my Saviour” that I can barely sing because the emotion is so great that I choke up.
Borrow a hymnal, take it home and read the lyrics. Listen to “Abide With Me”. Study some of the hymns, did you know that “It Is Well With My Soul” was written by a man who had just lost his wife and his children to death? That he could compose the words "Whatever the cost, thou hast taught me to say ‘it is well, it is well, with my soul’? I am starting to cry right now!
We are now in Christmas season when the BEST hymns are sung.
Even if your parish has dismal music, as soon as you get in the car you can turn on John Michael Talbot and Rich Mullens and sing along. You can go to concerts, heck, join your church choir and be part of the music.
how can I relate to the homily
Some priests are bad homilists. Period. If you do not have a great homilist, just give him the 5 minutes out of respect, take a finger rosary and pray for him in your mind.
On your own time, Listen to podcasts and YouTube videos, watch Fulton Sheen or Pope John Paul II for some amazing homilies. Read great homilies.
I know Msgr Gaston, his homilies are amazing

My Bishop publishes his homilies online, they are always good. Other bishops do the same. Read some of Bishop Flores (Brownsville TX). That man can flat out preach.
Bishop Sartain of Seattle’s is the best homilist I have ever had the pleasure to know:

When they do say something relatable, can I jot down notes on paper or my phone?
Of course you can take notes in the Homily, during the readings. We give our Confirmation prep students "Mass notebooks" and encourage this as a lifelong habit.
Oh, reading the readings prior to Mass helps. Do you have
Formed.org? They have a great video every week about the readings. USCCB also offers both audio and video about the readings to help prepare for Mass:
Prepare your heart for Mass. Read the readings ahead of time so when they are proclaimed you can shut your eyes and listen to the words.
