Thank you for your post but a lot of the things I’m reading are from saints and popes who really seem to elevate her to a point of our salvation.

Here is a quote that is apparently from Mary herself:

“Whosoever shall die wearing my Scapular shall not suffer the flames of Hell.”
  • Our Lady of Mount Carmel
Would Mary really state that salvation can actually come from wearing a scapular at the moment of death. That is so far from the teachings even of the Catholic Church let alone widely accepted views on the nature of salvation. What do I make of this?
I found this about the Brown Scapular (or Scapular of Our Lady of Mount Carmel) on the EWTN site:
“Those who die wearing this scapular shall not suffer eternal fire.” This must not be understood superstitiously or magically, but in light of Catholic teaching that perseverance in faith, hope and love are required for salvation.

No, it is not. What you linked to was not an Ecumenical Council, nor was it an infallible papal statement. If you don’t understand how the Magisterium works, you should avoid making such false statements in the future.
Irony alert.

… it is right to say, that nothing at all of that very great treasury of all grace which the Lord brought us–for ‘grace and truth came through Jesus Christ’ [Jn 1.17]–nothing is imparted to us except through Mary, since God so wills, so that just as no one can come to the Father except through the Son, so in general, no one can come to Christ except through His Mother.

What do you make of this - I’m not proposing sola scriptura but this just seems like bad theology - what am I missing
This one is out of context. It makes more sense with the previous sentences
From the Vatican website:
  1. But since the salvation of our race was accomplished by the mystery of the Cross, and since the Church, dispenser of that salvation after the triumph of Christ, was founded upon earth and instituted, Providence established a new order for a new people. The consideration of the Divine counsels is united to the great sentiment of religion. The Eternal Son of God, about to take upon Him our nature for the saving and ennobling of man, and about to consummate thus a mystical union between Himself and all mankind, did not accomplish His design without adding there the free consent of the elect Mother, who represented in some sort all human kind, according to the illustrious and just opinion of St. Thomas, who says that the Annunciation was effected with the consent of the Virgin standing in the place of humanity.(5) With equal truth may it be also affirmed that, by the will of God, Mary is the intermediary through whom is distributed unto us this immense treasure of mercies gathered by God, for mercy and truth were created by Jesus Christ.(6) Thus as no man goeth to the Father but by the Son, so no man goeth to Christ but by His Mother.

I have a catechism and am very comfortable with its description of Mary in it, but I’m finding all these writings by popes and saints that are making me very nervous
The Catechism is all you have to think about. If you are comfortable with the teachings about Mary in it, then ignore other writings.

No Catholic has to believe anything outside of the OFFICIAL teaching of the Church.

That Mary is Mediatrix of all graces is the official teaching of the Church. CCC 969.

Think about this for a minute:

Those in heaven…do you think those saints in heaven are attuned to the will of God?

Do you think they will do anything contrary to God’s will? Do you think they will say anything that is not of God?

Advocate, Helper, Benefactress, and Mediatrix.

Hmmm, I guess the catechism forgot the of all graces part.

It didn’t forget it, it just doesn’t use the phrase verbatim. The concept is there. Read the whole section, not just five words.
