If one has faith in Christ why should they join (or return to) the RCC?

I’m sorry but I don’t understand the question.
The question is, essentially, how do you know that the Gospel of Matthew is “from God”? Does it say it is? And even if it did, does that mean it is? (Doesn’t the Koran state that it is inspired?)

I think this is where we will disagree.
I believe the scriptures are true regardless of the findings of councils.

As an example if the RC, EO, OO, WELS, ELCA, UMC, SBC or any other denomination proclaims the Gospel of Mathew as apocrypha, I would still believe it to be true.

Based on what, though, lookaround? Based on what?

You are basing it solely on a tradition. It is something you believe (the Gospel of Matthew is inspired) *that’s not found in Scripture. *
 
In the end, I recognize it as true and believe that it is.
Its a matter of faith.

Would you then accept a Catholic’s position that he believes in (take your pick) the perpetual virginity of Mary, purgatory, papal infallibility, etc, because it is “a matter of faith”?

I’m glad that you accept the gospels lookaround ! The problem I have is this ? At some point in your life,you accepted the scriptures. Something sparked that acceptance ?

Malachi 3: 6, "For I the LORD do not change; therefore you, O sons of Jacob, are not consumed.
Hebrews 13:8, Jesus Christ is the same yesterday and today and for ever.

Absolutely! (how can someone not?)
I might disagree with the position or ask them why they believe what they believe, but in the end it’s a matter of faith.

I (or anyone else) can ask, “where is that in the Bible?” and the answer could be, “it is not”. Does that mean myself or someone else will then accept the position… maybe

From what I know the Gospel of Thomas is not accepted by most Christians to be inspired. I personally do not accept the Gospel of Thomas as inspired.

Right. Because the authority of the Catholic Church has discerned that it is not inspired.

There is nothing that one could read in it that would tell you it’s inspired or not.

One must go by the Sacred Tradition, that is, the witness of the Apostles and their successors, to tell you if its writings were coherent with the Tradition or not.
 
In my case no.
But when I did read the Gospels for the first time, by the time I got to the Gospel of John I accepted them to be true and I accepted Jesus as LORD 😃
You have just given a perfect example of what a Muslim could do with his Koran. Read it and determine it’s inspired.

Except, clearly, it is not the Word of God. By reading a “sacred” book one cannot determine by one’s own authority whether it is of God or not.

That paradigm gives rise to the Mormons, JWs, Muslims, etc being able to profess that their “sacred” writings are inspired.

This is very dangerous ground on which you tread, lookaround.
