Technically, it’s accurate, in the same way Roman Catholics are polytheistic.
Mormons have one God they know and ask favors of (roughly corresponding to your God the Father), but we believe he has a God, and that God has a God too, and on and on.
You guys have Father, Son, Holy Spirit, and Mary. Then you have demigods in various saints, though most Catholics probably couldn’t be called worshipers of them.

Catholics do not believe that our venerated saints or our Blessed Mother are divine. They have no godly powers. All that is done is done by God.
Mormons, however, believe that there are many gods, all who have divine powers and can do lots of godly things. Like Create things such as planets and all the things that go on a planet. Like you and me.
They also believe that they too could someday be a god, with divine powers, and do lots of godly things.
Catholics have no such belief. God is God, One God, and is infinite, eternal and uncreated. Our venerated saints do not do godly things. Our Blessed Mother does not do godly things. They are, however, part of our Holy Community, and even in death, they pray for us.
St. Mary Magdalene, pray for us.
Holy Mother, pray for us now, and at the hour of our death.
Lord, hear our prayer.
And we believe that if we confess our sins, when we die, we have hope in Christ that we too will be part of our Holy Community. With God. And there we probably will continue to pray for each other. It’s what we do.
