And my guess is that in Africa, they sing music that is very African, accompanied by drums, and quite joyous. I’ve seen videos where they dance up and down the aisles. It’s ages ago, but does anyone remember when the

That hasn’t been what I have seen. Catholics from African countries tend to be VERY traditional. They might employ cultural distinctives, but nothing like what is seen in the West.
As for other Christian denominations, I can’t say. The more evangelical denominations tend to be influence by
Western styles and culture.
African music tends to be far different than what many in the West (whose only point of reference seems to be the old Tarzan movies) expect.
