5 large potatoes
2 green onions, plus more for garnish
1/4 teaspoon dried basil, or more to taste
Salt and pepper, to taste
Water (quantity will vary)
2 1/2 cups milk (plus more if needed)

1 Peel and roughly chop potatoes. Discard tops and bottoms of green onions and mince the remaining pieces.

2 Add potatoes and onions to a medium-sized saucepan and cover with water. Boil on high for 30 minutes, adding more water to the pot as needed, until potatoes as well cooked and soft.

3 Remove pot from heat and drain the water over a strainer until it is just under the level of your cooked potatoes. Return any onions and basil the strainer catches to the pot.

4 Add 2 1/2 cups milk to potatoes and mash until mostly smooth, leaving a few small chunks for a hearty texture. Add more milk, a dash at a time, until soup reaches your preferred consistency.

5 Season liberally with salt and pepper to taste. Return pot to the stove and heat, stirring frequently, for 2-3 minutes. Serve garnished with additional green onions if desired.

I don’t. I buy it. I cannot even remember the last time I cooked. 🤔
I have made it from scratch before, but not for a long time now, so I buy it. Progresso brand has a decent one.

I only have had a bit of lemon flavored water this am. I am going to give my new instant pot a whirl and try making 15 bean soup. I am debating on using smoked sausage or ham as the meant.
 
1/2 of a bagel with cream cheese and tea. My hubby had the other 1/2 with bacon and scrambled eggs.
i wonder what it would be like eating both at the same time, one bite of eggs than a bite of cream cheese. sounds good
Progresso brand has a decent one.
i recent tried the lite version of their potato, bacon, and cheese. it tasted too chemically for me.

Apart from homemade, the absolute best potato soup I’ve eaten is O’Charley’s Loaded Potato Soup. That and free pie on Wednesday makes this girl a happy camper.😋😋😋
 
I had bone broth for lunch. Going to have to keep it in good supply after my surgery altho I’ll have to remember to let it cool off a bit so I don’t burn my throat.

I think they have wonderful potato soup, too, Lily. As a slim woman who wants to remain slim, I regretfully forgo the pie. 😦
 
I can’t pass up the pie. I gotta have my Ooey Goey Caramel Pie. Prior to tasting O’Charley’s pie, my fav had been Shoney’s (aka Big Boy on the West Coast) Strawberry Pie. I swear, I could eat that all day.
 
I like strawberry pie, Lily. Never had Big Boy. I usually stick to just plain strawberries, though. I could eat those all day! I love them! ❤️

I’ve seen the caramel pie. I did have their peach pie once, but they’d made it with peaches that weren’t ripe! Pie sacrilege!
 
For tonight’s dinner I made breaded and oven-roasted chicken leg quarters, and served peas and carrots on the side, along with mashed potatoes. I had cold bottled water to drink.

lol. I was just going to buy bone broth today but the store was already closed.
