For dinner tonight I had leftover barbecued chicken thighs and leftover roasted russet potatoes with a tossed green salad on the side.

I’m drinking lemonade water.
 
Finished watermelon water. Trying to lose the 3 lbs I regained from eating solid foods. At 4’11”, I look like the Goodyear blimp.

Can’t wait to resume my veggies. In the meantime, I’m craving🍿 and tamales.

Monday’s x-rays showed that the swelling is slowly going down. So hopefully, I’ll be able to eat my fav foods soon. Barbacoa probably won’t be until after the holidays tho. 😭😭😭
 
Well, at least you can enjoy eggs…so many ways to enjoy them…
[One of my favorites is Eggs Derelict, which will be off-limits to you for a while…when you’re ready, let me know, and I’ll give you the recipe…]

My normal brunch…
Greek yogurt, an apple, a chunk of cheddar cheese, and spiced tomato juice.
 
For a late lunch today, I had a turkey breast sandwich with turkey and Colby-Jack cheese. I had some Nacho cheese chips on the side with some cold bottled water to drink.

I drink Spring water. I have to be careful and watch sodium and mineral content in water for the sake of my kidneys.

We like having the convenience of bottled water too for when we go out so that we can take it with us in a cooler.

We also use the small bottles of flavored water enhancers and the sugar-free drink “to go” packets, so it all makes it easier to use with the 16.9 oz. water bottles. 🙂
 
I was naughty. I had a 1/4 cup of guac. Well, my dr did say I could have it if I mooshed it. And I mooshed it real good. It went down easily. Satisfied several of my cravings. I fell asleep after.

Also had some Propel water.
 
We are blessed - we have an Artesian well…the water is always cold, and tastes terrific…there is some iron, but that just adds ‘character’…My experience with bottled water is negative - it was water with ‘minerals’ added for flavor, and it hit me right in the gut, if you know what I mean…
I shop for a friend every week, and once I bought a case of ‘Spring water’ instead of ‘Water with minerals’…she ended up using it to water her plants!
 
Barb went old-school again…
Pan-fried summer sausage and onions, potato pancakes, and over-easy eggs, washed down with a very good IPA…homemade ginger snaps for dessert.

[I’ve put on ‘a few’ pounds since she retired…]

Thursday - date night!

Chips and salsa/ pico de gallo, Chiles relleno topped with grilled carnitas and ranchero sauce, rice, and refried beans…and a tall Dos Equis Ambar.
 
Now I’m craving Mexican food.

Note to self: stop by the local Mexican restaurant for some carnitas and pico de Gallo.

Some churros would be nice too.

Maybe this weekend.
