Don’t you claim the Holy Spirit showed the CC the correct interpretation?
I don’t claim all I think I understand is correct, therefore, not all I understand if by the Holy Spirit. But the Truth I understand is from the Holy Spirit.
Paul penned much of the NT. He never claimed infallibility; quite the contrary. The miracle is that God uses the fallible to bring forth the infallible.
Why is the CC infallible? Because it says so.
We claim the men of the Church wrote the scriptures and taught the interpretation to those they passed the scriptures too. Those men passed along the scriptures with the interpretation. Eventually, men of the Church who received the scriptures and interpretations, defined the canon of the New Testament. Then men of the Church preserved the scriptures and interpretations through the ages. When the Protestant reformation took place, they took copies of the Bible with them, but they didn’t take the interpretations. They began interpreting for themselves.
To believe that Paul wrote ‘fallibly’ is to doubt God’s power to inspire His infallible word be written. In other words, if Paul is to be taken as his teachings were fallible, then his writings cannot be infallible. But we all believe in God’s power to inspire His word through fallible men. Fallible men wrote scriptures, defined the canon of scriptures, added chapter and verse numbers, added punctuation, translated the scripture languages, and preserved the scriptures. At what point do we decide the scriptures can no longer be trusted? Again, we don’t doubt because we believe in God’s power to protect His truth. God can protect His truth in His written word, that He inspired, or His Church, that He built.
The Catholic Church says it’s infallible, because of scriptures, specifically those where Christ spoke to those He appointed over His Church and those God inspired words telling us that the Church of the Living God is the pillar and ground of truth.

Joh 16:13 When the Spirit of truth comes, he will guide you into all the truth; for he will not speak on his own authority, but whatever he hears he will speak, and he will declare to you the things that are to come.
Joh 14:26 But the Counselor, the Holy Spirit, whom the Father will send in my name, he will teach you all things, and bring to your remembrance all that I have said to you.
1Ti 3:15 But if I tarry long, that thou mayest know how thou oughtest to behave thyself in the house of God, which is the church of the living God, the pillar and ground of the truth.**
It would be nice if some recognized the Catholic Church teaches from an interpretation of scriptures, as opposed to making general statements such as, ‘because the Catholic Church says so.’
