I think we are in agreement that not everything Jesus said and did is written.That is one interpretation, but is it the correct interpretation is it what God has said?
We also look at His actions, which sometimes speak louder than words.
Catholic doctrine, unlike the doctrines of our separated brethren, do not come from the interpretation of scripture. Our doctrines come from Christ, through the Apostles. We see them reflected in Scripture because the NT was written by those who held Catholic doctrine.

However, it seems that you are not making a distinction between Sacred Tradition, and human tradition. Sacred Tradition comes from God, and is immutable, like the Scripture.
