I oven-roasted a small Black Forest ham with some orange juice and dried cranberries that I had rehydrated, to give it some extra flavor.

For sides I made green beans, seasoned rice pilaf, and small green salads.

We had iced lemon pound cake for dessert.

It’s close to my surgery date. So we aren’t keeping a lot of food in the house right now. No room in the fridge or freezer for leftovers.

Submarine sandwiches, Lay’s potato chips, Sprite and Gatorade was all I had for Easter. Mama had peanut butter crackers for her supper.

I didn’t go out or attend a big dinner, either, Lily. I had fish and some onion rings.

We need to post photos of luscious food here so we can eat vicariously! How about a mango tart to start the day?
