Flaky pastry is my favourite, wrapped around apples with cinnamon & nutmeg, mmm … The lard is my shortening. I remember the advice of Madame Jehane Benoît, a Sorbonne trained cook from Quebec (read with motherly French accent):

“To make a good pastry, you ‘ave to use lard, not shortening. Not because wan is better dan dee odder, but because of da way day ackk.”

Funnel cake is like a tetanus shot. You need one every ten years or so. I’m good now until 2027.

And my burning question is: Why doesn’t anyone (bakeries) make Napoleons anymore?

Oh, Napoleans! Never to be eaten in public because they make such a mess! But at home, oh.so.good!
Last time I saw those was when we lived in New York.
 
The placethat made our wedding cake makes them but it’s a loooooong drive from the house.
