Great! Watch. Listen. Learn. Actually listen to her. But offer meaningful feedback, not just monosyllables, and don’t force her to carry the burden of a burdensome conversation. It’s also possible to suggest subjects (so that she doesn’t have to be coming up with them – you’re the initiator, the host, after all) but still allow her to do most of the talking.
So again, what do you like and dislike in men?
Every woman is different. For some commonalities, as a rule, they will usually like a man who is manly. This means not effeminate, capable of taking charge (which does not mean forcing his way with it), protective, nor does it hurt to have the external appearance of a manly man (although both the standards and the importance of this varies across cultures, social strata, personality types and individual characteristics). A sense of humour helps with all people, not just women, but social graces are optional. For a future-minded responsible Catholic girl you’d better be dependable and capable of reliably providing for a family (not necessarily on your own income alone). And the better Catholic you are, the better. It makes her life easier if you can admit your mistakes and aren’t in love with yourself (a manageable ego).
As a rule, what is disliked is when a man is controlling or creepy. And creepy is an undefined notion basically similar to ‘slime’ and usually involving some sort of obsession. It would be creepy to think that all women like the same type of man, for example.

Also ladies, how can we man say when a girl is interested in us?
A woman who is interested in you will either get out of her way to spend time with you, earn your approval or show you her own approval, make sure that you’re comfortable in all sorts of way, perhaps show you to mum or friends. She may become shy or self-conscious or uncertain or nervous, especially if she has a high opinion of you and wouldn’t like to ‘ruin it’ by making a bad impression on you. A woman interested in you may also be interested in securing some sort of commitment from you, so you might actually end up being asked to declare your intentions with regard to her (or make up your mind), especially after several meetings between the two of you.
I could give you some body language tips, but you’d be better off reading a book written by someone competent, along with all the caveats against jumping to conclusions. First of all don’t overanalyse it and don’t presume too much. Body language isn’t as simple as politician pulled his ear when talking = he was lying to his electorate. Don’t sweat small things. And you’re probably better off listening to her and investing yourself in the conversation than trying to work her out.
And try to have a good time.
