A mortal sin requires full consent which in most cases is not there as I said most sins of the flesh are spontaneousSimple.
God wants the salvation of all people. It’s there in black and white in scripture, so that much we CAN know about Him.
At the same time all are NOT saved - Jesus said only few find the path that leads to life. THAT also is there in black and white in scripture, so that much we can also know.
Therefore whatever people do that leads or tends towards their damnation is NOT what God wants. Breaking the commandments is one of those things that leads or tends towards their damnation, ergo that too is something God does NOT want. Logic 101.
By the way, if mortal sin is so hard, why are only few saved? The answer is that it actually isn’t that hard. It doesn’t matter whether you ‘thought’ much at the time or not.
Looking at the three requirements, if you know beforehand that something is grave matter and make a free (not forced or coerced or lacking consent in any way) decision to do it, you can sin in the blink of an eye, even if not much actual thought accompanies it at the time.
